Blockcerts v3-beta

Hi community,

Following the release of the v3-alpha version last year, we’ve been working on the v3-beta update.

The main purpose of this update is to add the display and metadata options as part of the official Blockcerts definition, while still being compliant with the Verifiable Credentials Data Model 1.0.

Feedbacks and comments are welcome on the PR of the cert-schema.
